Yes, soup for me?
Last week, the sunny weather had me craving one last mojito. This week? It’s hot tea (preferably laced with whiskey at night) and an insatiable craving for soup.
I want the pho from My Cahn. The mushroom soup from Old Wives Tales. The roasted squash soup I make myself, when I’ve time. I want hot broth. Slurpy noodles. The kick of hot and sour. The tang of a good Tom Khaa soup - with that splash of coconut milk to blunt the edge. Bean soups…pea soups…lentil soups…stone soups…I love them all!
Yep, I have my own personal favorites and go-tos. But now that we’re heading into the cold, dark and rainy times, I need more, more, more.

I love french onion soup this time of year. Fenouil has a nice french onion soup that tastes as though the onions have been carmelized… I particularly enjoy starting with a salad and following with the soup. An enjoyable lunch or what I’ve done for supper… sharing some foie and tartare then moving in on the soup, delicious.
I think everyone would be suprised by the soups at New Seasons… They’re better than the soup at most restaurants. Knowing the chefs who make it, they’re proud to put in hours just getting the stock right, and they don’t cut corners on ingredients.
The new New Seasons in Beaverton also has a made-to-order ramen bar… for $5+ you get udon/rice noodle/ramen with shitake or meat stock, seaweed, edemamme, veggies, and choice of grilled beef, chicken, pork or tofu. Big helping and it’s damned good.
However, I could use some pho soup right about now…
Noble Rot
Any soup at my house. I make awesome soup, which in honor of my youngest we call shoup. You’re welcome to come try some. ;) I think tonight we’re having sausage lentil shoup. Usually I make my own stock but don’t always have time. When I do, the secret is to let the bones soak in acidulated water for about an hour before boiling, and not to peel the onions. Also to cook the hell out of it. I simmer my stock overnight.
Pho Van on 82nd. I adore the #6. If I’m not feeling good I get the large and just breathe it till it’s cool enough to eat. If I can taste everything and I’m functioning well, I get the small and an order of salad rolls. mmmmmm.
Oh, I could do with some pho van or pho hung right about now. But you know what’s off the beaten track? Hot Pot City on SW 1st — where you can do your own hot pot in a broth of your choice. It’s seriously nice for this sort of weather.
No Fish Go Fish, bar none. Either the restaurant on 40th & Hawthorne or the soup cart on 5th & Yamhill.

Pok Pok’s Khao Soi Kai - Chiang Mai-style chicken noodles in a milk coconut soup topped with crispy yellow noodles, shallots, pickled mustard greens and served with a hot chili paste.
It is without a doubt the most amazing soup I’ve ever tasted.
